Ingredients:
- Half a Warburtons Gluten Free White Farmhouse Loaf
- 9 free range eggs
- 500g gluten free sausage meat
- 100g gluten free flour or cornflour
Method:
- Heat a deep fat fryer to 150°C.
- Boil a large pan of water and add 6 eggs; boil for 8 minutes. Cool the eggs in cold water and remove the shells.
- Pour the gluten free flour or cornflour onto a plate.
- Crack the remaining 3 eggs into a shallow bowl and whisk together lightly.
- Place the gluten free loaf in a food processor and blitz until you have rough breadcrumbs. Transfer to a plate
- Split the sausage meat into 6 equal balls. Flatten each ball and wrap each egg in the sausage meat, taking care to cover fully.
- Cover each egg in flour, then roll in the egg mix and finally transfer to the breadcrumbs.
- Cook only 2 eggs at a time in the fryer. Cook for 10-12 minutes in the hot oil until fully cooked but not too coloured.
- When you have cooked all 6 of the eggs turn up the fryer to 180°C and repeat the cooking process until the eggs have a lovely golden colour.
- Serve hot with salad leaves and gluten free wholegrain mustard.
