Griddle these sandwich thins on a pan, then top with a Greek style salad and feta cheese for a fresh lunch.

Ingredients: 
  • 2 Warburtons Gluten Free White Sandwich Thins
  • 6 ripe Cherry Tomatoes, chopped
  • ¼ Cucumber, diced
  • ¼ Red onion, finely sliced
  • A handful of kalamata olives, halved
  • Half a pack of Feta Cheese, crumbled
  • A few little gem lettuce leaves, finely shredded
  • half Juice of lemon
  • 2tbs Extra Virgin Olive Oil, plus a little for brushing
  • 1 Freshly ground black pepper
  • A sprinkle of parsley
Method: 
  1. Place the cherry tomatoes, cucumber, onion, olives, feta and lettuce in a bowl, and add the lemon juice and olive oil. Stir well, then season with black pepper and sprinkle over the parsley. Set aside.
  2. Heat a griddle pan. Brush the Warburtons Gluten Free White Sandwich Thins lightly with olive oil and place in the hot griddle pan. Leave to toast for 2-3 minutes then turn and toast for a further 2 minutes.
  3. Place the gluten free thins onto serving plates then pile on the Greek Salad topping, making sure that you spoon over any juice too.
