Previous Great British Bake Off contestant, Howard Middleton has developed for you a delicious weekend breakfast treat. Served either savoury or sweet, this recipe for gluten free French Canadian toast is the perfect addition to your weekend.

Ingredients:
- 2 eggs beaten
- A little milk (optional)
- 1 tbsp oil, for frying
- For the sweet version:
- A pinch of cinnamon
- Sliced banana
- A couple of Medjool dates, chopped
- Maple syrup, to taste
- For the savoury version:
- A pinch of smoked paprika
- 1 or 2 slices of smoked bacon, fried till crispy
- Maple syrup, to taste
Method:
- Whisk the eggs in a shallow bowl (a pasta bowl is ideal). For the sweet version add the cinnamon, for the savoury one add the smoked paprika and whisk. Add a little milk if you want the mix to stretch to more than one slice of bread.
- Dip the bread in the egg and coat both sides.
- Heat the oil in non-stick pan. Fry the bread until golden brown on both sides.
- Serve hot with the fruit or bacon as appropriate and drizzle with maple syrup.
