Fresh avocado combined with chilli, garlic and lime makes a delicious topping for our toasted Multiseed Sandwich Thins. Add streaky bacon and grilled tomatoes for even more flavour.

  • 3 Warburtons Gluten Free Multiseed Sandwich Thins
  • 1 avocado
  • ½ lime juice
  • 1 small red chilli, deseeded and finely chopped
  • ½ clove garlic, crushed
  • 1 Freshly ground black pepper
  • A few sprig fresh coriander, chopped
  • 6 slices of streaky bacon
  • 5 cherry tomatoes, halved
  1. Peel and de-stone the avocado, and place it on a chopping board. Squeeze over the lime juice then add the chilli and garlic. Use a fork to mash the avocado together with the other ingredients on the board. Season with pepper and mix in the coriander.
  2. Fry or grill the bacon until it's crispy, adding the tomatoes for the last two minutes of cooking.
  3. Lightly toast the Multiseed Sandwich Thins on both sides, and place on a serving board or plate, with the insides facing up. Divide the avocado mixture between the Thins and top with a few tomatoes or some bacon, or both. Serve while still warm.
