Use our Gluten Free White Sandwich Thins to create a gorgeous Chicken Salad Sandwich for lunch. Made with chicken, lettuce, cucumber, mixed herbs and gluten free mayonnaise.

Makes 2 Thins
Ingredients:
- 2 Warburtons Gluten Free White Sandwich Thins
- 1 large chicken breast
- 1 tsp olive oil
- freshly ground black pepper
- 2tsp chopped fresh mixed herbs such as flat-leaf parsley, basil and chives
- 10 slices cucumber
- handful lettuce leaves
- 2tbs Gluten free mayonnaise
Method:
- Preheat a griddle pan or non-stick frying pan. Place the chicken on a board and carefully cut through the breast horizontally to make two thin flat fillets. Drizzle a little oil onto each fillet and season with black pepper.
- Cook on the hot griddle for a few minutes on each side, ensuring that the meat is completely cooked throughout. Transfer to a plate, sprinkle with half the herbs and set aside.
- Meanwhile, mix the mayonnaise with half the herbs
- Spread a little mayonnaise onto the base of each thin, then divide the lettuce and cucumber between them. Top with a piece of herby chicken and place on the lids before serving warm.
