Previous Great British Bake Off contestant, Howard Middleton has developed for you a delicious weekend breakfast treat. Served either savoury or sweet, this recipe for gluten free French Canadian toast is the perfect addition to your weekend.

Ingredients: 
  • 2 eggs beaten
  • A little milk (optional)
  • 1 tbsp oil, for frying
  • For the sweet version:
  • A pinch of cinnamon
  • Sliced banana
  • A couple of Medjool dates, chopped
  • Maple syrup, to taste
  • For the savoury version:
  • A pinch of smoked paprika
  • 1 or 2 slices of smoked bacon, fried till crispy
  • Maple syrup, to taste
Method: 
  1. Whisk the eggs in a shallow bowl (a pasta bowl is ideal). For the sweet version add the cinnamon, for the savoury one add the smoked paprika and whisk. Add a little milk if you want the mix to stretch to more than one slice of bread.
  2. Dip the bread in the egg and coat both sides.
  3. Heat the oil in non-stick pan. Fry the bread until golden brown on both sides.
  4. Serve hot with the fruit or bacon as appropriate and drizzle with maple syrup.
