Make your own Quesadillas using our gluten and wheat free multiseed wraps. Fold with cheese, refried beans and chicken then pan fry for a tasty Mexican style snack.

Ingredients: 
  • 2 Warburtons Gluten Free Multiseed Wraps
  • 3tsp Olive Oil
  • 2 spring onions, washed, trimmed and finely sliced
  • 1 clove garlic, crushed
  • 1 red chilli, washed and finely chopped
  • 1tsp ground coriander
  • 1tsp ground cumin
  • 1tsp paprika
  • 1 tin mixed beans in water, drained
  • 1 medium tomato, diced
  • Handful of fresh coriander leaves, chopped
  • 1 courgette, washed and sliced
  • 1 cooked chicken breast, torn into pieces
  • 100g cheddar cheese, grated
Method: 
  1. In a frying pan, gently cook the spring onion, garlic and chili in 2tsp of oil for one minute, then add the spices and cook for a further minute
  2. Stir in the beans and tomato and 3tbs water and reduce the heat to minimum. Mash half of the beans with the back of the spoon and leave the rest whole. Cook for a few minutes until the beans are heated through then turn off the heat and stir in the choppe
  3. Fry the courgette slices in the remaining oil for a few minutes until golden brown.
  4. Place the wraps on a board. Take half the grated cheese and divide between the two wraps, top with the beans and courgettes, then add the chicken pieces. Sprinkle over the rest of the cheese. Fold the wraps in half.
  5. Carefully slide one wrap into a large frying pan and cook without oil over a low heat for about 5 minutes until the cheese starts to melt. Slide to the edge of the pan and carefully turn the wrap over, pushing any escaping bits back inside! Cook for anoth
  6. Repeat with the other wrap. Delicious served with a tomato salsa!
