Top our White Sandwich Thins with this delicious mixture of grilled mushrooms, gooey melted mozzarella and rich pesto.

Ingredients:
- 2 Warburtons Gluten Free White Sandwich Thins
- 4 large (or 8 smaller) field or Portobello mushrooms
- 1 tsp olive oil
- pinch Freshly ground black pepper
- 150g ball of mozzarella, chopped
- 2 tbs fresh pesto
- pinch Fresh basil leaves to garnish
Method:
- Preheat the grill to medium high.
- Place the mushrooms (stalk sides upwards) onto the grill rack, and drizzle with the oil. Grill for a few minutes until they're tender.
- Lightly toast the Warburtons Gluten Free White Sandwich Thins on both sides.
- Place the mozzarella on top of the mushrooms, and return to the grill for two minutes until the cheese has melted.
- Place the toasted Thins onto plates, and top with the mushrooms. Spoon over the pesto and serve with the basil leaves to garnish.
