Top our White Sandwich Thins with this delicious mixture of grilled mushrooms, gooey melted mozzarella and rich pesto.

Ingredients: 
  • 2 Warburtons Gluten Free White Sandwich Thins
  • 4 large (or 8 smaller) field or Portobello mushrooms
  • 1 tsp olive oil
  • pinch Freshly ground black pepper
  • 150g ball of mozzarella, chopped
  • 2 tbs fresh pesto
  • pinch Fresh basil leaves to garnish
Method: 
  1. Preheat the grill to medium high.
  2. Place the mushrooms (stalk sides upwards) onto the grill rack, and drizzle with the oil. Grill for a few minutes until they're tender.
  3. Lightly toast the Warburtons Gluten Free White Sandwich Thins on both sides.
  4. Place the mozzarella on top of the mushrooms, and return to the grill for two minutes until the cheese has melted.
  5. Place the toasted Thins onto plates, and top with the mushrooms. Spoon over the pesto and serve with the basil leaves to garnish.
