Fresh avocado combined with chilli, garlic and lime makes a delicious topping for our toasted Multiseed Sandwich Thins. Add streaky bacon and grilled tomatoes for even more flavour.
Ingredients:
- 3 Warburtons Gluten Free Multiseed Sandwich Thins
- 1 avocado
- ½ lime juice
- 1 small red chilli, deseeded and finely chopped
- ½ clove garlic, crushed
- 1 Freshly ground black pepper
- A few sprig fresh coriander, chopped
- 6 slices of streaky bacon
- 5 cherry tomatoes, halved
Method:
- Peel and de-stone the avocado, and place it on a chopping board. Squeeze over the lime juice then add the chilli and garlic. Use a fork to mash the avocado together with the other ingredients on the board. Season with pepper and mix in the coriander.
- Fry or grill the bacon until it's crispy, adding the tomatoes for the last two minutes of cooking.
- Lightly toast the Multiseed Sandwich Thins on both sides, and place on a serving board or plate, with the insides facing up. Divide the avocado mixture between the Thins and top with a few tomatoes or some bacon, or both. Serve while still warm.
