Turkey is a lean source of protein and by sneaking in some grated courgette this also increases the veggies within the dish! When the Great British Summertime allows, the koftas would be a delicious addition to any BBQ!

Ingredients: 
  • 1x courgette, grated
  • 1x white onion, finely chopped
  • 2 x garlic cloves
  • 1x egg
  • 1 tsp mixed dried herbs
  • 1 tsp ground cumin
  • 500g lean turkey mince
  • Salt & pepper
  • Olive oil, enough to coat
  • For the Tzatziki:
  • 4tbsp 0% fat Greek yogurt
  • 1 lemon, juice only
  • 10g fresh mint, chopped
  • 1 tomato, chopped
  • Green salad leaves to serve
Method: 
  1. In a large bowl, combine the turkey mince, ground cumin, mixed herbs, salt & pepper, grated courgette & onion
  2. Grate the garlic cloves into the mixture and stir everything together
  3. Whisk the egg and add to the mixture, stir to combine evenly. The best way to do this is to get your hands in and really mix everything together!
  4. Divide the turkey mixture into eight and shape with wet hands into oval shaped balls.
  5. Brush the koftas with olive oil before placing under the grill for 16-20 minutes or until cooked all the way through. Turn the koftas frequently to ensure they are browned on all sides.
  6. To make the tzatziki, combine all the ingredients in a bowl and season with salt and pepper to taste.
  7. Assemble the wraps by evenly distributing the salad leaves, chopped tomatoes, a dollop of tzatziki and two koftas per wrap.
  8. Roll and cut in half before digging in!
