Follow this recipe for a tasty twist on a lunchtime classic, using our Warburtons Gluten Free Crumpets. 

Yield: 
4 crumpets (halve recipe for 2 crumpets)

Ingredients: 
  • 4 Warburtons Gluten Free Crumpets
  • 1 tin tuna
  • 1/4 red onion, finely diced
  • 1 heaped tbsp GF mayonnaise
  • fresh flat leaf parsley, chopped
  • large handful fresh baby spinach leaves
  • 1/3 jar roasted peppers in oil, chopped
  • handful (about 40g) grated cheddar or lancashire cheese
Method: 
  1. Preheat grill
  2. Mix tuna in bowl with onion, mayo and parsley
  3. Toast crumpets then top with spinach, then tuna mix, then peppers, then cheese
  4. Pop under grill few mins until golden and bubbling
