A little something different...a vegetarian treat that really hits the spot

Yield: 
4-6 wraps

Ingredients: 
  • 4-6 Warburtons Gluten Free Ancient Grain Mini Wraps
  • 3-4 tsp olive oil
  • 1 small red onion
  • 1/2 red pepper, finely diced
  • 1 clove garlic, finely chopped
  • pinch paprika
  • pinch tumeric
  • pinch dried chilli flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 75g ready cooked quinoa
  • 1 x 210g tin chickpeas in water, rinsed and drained
  • 1/2 lemon, juice only
  • pinch sea salt and black pepper
  • few fresh mint leaves, chopped
  • few sprigs flat-leaf parsley, chopped
  • handful lettuce leaves
Method: 
  1. Halve the onion. Finely dice one half and finely slice the other half.
  2. In a non-stick frying pan, soften the diced onion and red pepper in 2 tsp oil for 3 minutes without browning.
  3. Add the garlic, paprika, turmeric, chilli flakes, cumin and coriander, and fry gently for 1-2 minutes, adding a drop more oil if required.
  4. Stir in the quinoa and chickpeas, squeeze over the lemon juice and heat gently until warmed through. Season with a little salt and pepper, and stir in the chopped herbs.
  5. Warm the wraps for ten seconds or so in the microwave if desired, then top with the warm chickpea filling and roll up.
  6. Put a few lettuce leaves onto each plate and scatter over a little of the sliced red onion, then drizzle over a little olive oil if desired. Serve the wraps while still warm.
