This recipe is quick and easy to put together and packed full of flavour thanks to a spicy harissa dressing. Enjoy as a tasty lunch on the go or serve as a dinner option with a green side salad and roasted aubergines!

Ingredients: 
  • 4 x Warburtons Gluten Free High Protein Wraps with Super Seeds
  • 1 x 300g pot of hummus
  • 10g coriander leaves, chopped
  • 1 x 400g tin of cooked green lentils, drained
  • 1 rib of celery
  • 1 red chilli
  • 1 large carrot, peeled
  • For the dressing:
  • 1 x lemon (juice of)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp harissa paste
  • Salt & pepper
Method: 
  1. Coarsely grate the carrot into a mixing bowl
  2. Add the drained lentils and chopped coriander to the carrot
  3. Thinly slice the chilli and celery and add to the other ingredients
  4. Whisk together the dressing ingredients in a separate bowl and add salt and pepper to taste
  5. Pour the dressing over the salad and stir together to ensure the salad is evenly combined
  6. Spread a generous dollop of hummus onto the Warburtons Gluten Free Protein Wraps and top with ¼ of the salad mix. Repeat for the other three wraps
  7. Tuck in and enjoy!!
