Ingredients:
- 2 Warburtons Gluten Free High Protein Wraps
- 100g large cooked prawns
- 1 ripe tomato, diced
- 1 spring onion, sliced
- 75g feta cheese, crumbled
- few sprigs fresh flat-leaf parsley, chopped
- 1 avocado, halved and de-stoned
- ½ lemon, juice only
- large handful watercress
Method:
- Mix the prawns with the tomato, onion, feta and parsley
- Scoop out the avocado and mash with a fork on a plate. Add a squeeze of lemon juice and stir
- Divide the smashed avocado between the wraps and spread. Add the prawn and feta mix then top with the watercress and fold
