If you're looking for a way to pack our new, gluten free pittas, then look no further than these delicious halloumi and roasted vegetable pittas. Perfect for the whole family to enjoy. 

If you have an air fryer, the vegetables cook really well this way. If not, just roast in the oven.

Ingredients: 
  • 2 Warburtons Gluten Free Pittas
  • 1 small to medium courgette, sliced
  • 1 red onion, cut into chunky pieces
  • 1/2 red pepper, cut into chunks
  • 1/2 yellow pepper, cut into chunks
  • 2 tbs olive oil
  • Sea salt and black pepper
  • 1/2 - 1 tsp paprika
  • 1 clove garlic
  • 1 block halloumi cheese, cut into 12 slices
  • 4 tbs houmous
  • Fresh mint leaves
Method: 
  1. Put the courgette, peppers and onion into a large bowl. Add the oil, salt, pepper and paprika then toss well to make sure all the veg are coated
  2. Tip the vegetables into the air fryer basket and cook for about 10 minutes at 180oC, shaking the basket every now and then
  3. Add the chopped garlic to the vegetables and give them a good shake. Cook for another 3 minutes or until the veg are nicely cooked and just turning golden round the edges
  4. Meanwhile, heat a non-stick frying pan over medium-high heat then add the halloumi slices (don’t add any oil). Cook for a couple of minutes without moving the cheese, until its golden brown, then turn over and cook the other side
  5. Pop the pitta breads on top of the vegetables in the air fryer and heat for a further 1- 2 minutes while the halloumi is cooking
  6. Lift out the warm pittas and cut in half the4n carefully open the pockets. Spread some houmous on the insides of the bread then fill with the roasted vegetables, halloumi and mint leaves
  7. In oven: Arrange vegetables on a large roasting tray and drizzle with oil. Add the whole clove of garlic. Sprinkle on the paprika and season with salt and pepper. Roast for about 20-25 minutes at 180oC.
