For something a little different, try these delicious Eggy Crumpets with bacon and tomatoes. 

For 2 crumpets

  • 2 Warburtons Gluten Free Crumpets
  • 1 egg
  • splash of milk (use almond/soya/rice/oat milk if preferred)
  • grind black pepper
  • 4 rashers streaky bacon
  • 2 small bunches cherry tomatoes on the vine
  • few sprigs fresh thyme
  • extra black pepper if desired
  1. Whisk egg with milk and pepper
  2. Soak crumpets in egg mixture 10 mins, turning occasionally
  3. Meanwhile fry bacon and tomatoes in pan and set aside
  4. Add small knob butter to clean pan and fry eggy crumpets until golden on both sides
  5. Arrange bacon and tomatoes on top and garnish with thyme leaves and extra black pepper
